Chinese Broccoli, where have you been all my life? Why have I not known about this vegetable? Maybe because it’s called Yod Fah or Chinese Kale or so many other names that I have never heard of before. What’s so great about it? For starters, it’s so easy to grow and as of today, no insects have found it to be their choice. I also love that you can and should eat all of this plant. Ok, I don’t eat the thickest stem running through the middle, but I do eat the rest.
What else do I love? My entire family likes it. I don’t mean they tolerate it like they do when I have a vegetarian meal. They actually like to eat it stir fried over rice with onion, garlic, and soy sauce. The taste is somewhere between broccoli and asparagus. It cooks like collards. I know how to make collard greens southern style, so this was an easy adaptation for me.
I plan to cook and freeze and pressure can some for the winter if we don’t eat it all!
